4年亏损超12亿元!小火锅需求仍在,呷哺呷哺却难回巅峰 呷哺呷哺、凑凑餐厅翻台率均不足3次/天。 3月27日晚间,呷哺呷哺(0520.HK)发布了2024年业绩报告,营业收入47.55亿元,同比减少19.65%;净亏损4亿元,上年同期为亏损1.99亿元;每股净资产为0.71元,同比减少35.56%。 这已经是呷哺呷哺自2021年以来连续第4年亏损,财报显示,2021-2024年分别亏损2.93亿元、3.53亿元、1.99亿元、4.01亿元,4年间累积亏掉了12.46亿元。 呷哺呷哺、凑凑餐厅翻台率均不足3次/天 呷哺呷哺旗下主要经营呷哺呷哺、凑凑两个品牌的餐厅,两大品牌收入占总收入比重的96%。其中,财报显示,2024年来自呷哺呷哺餐厅的收入为26.29亿元,同比减少13%;来自凑凑餐厅的收入为19.48亿元,同比减少26.5%。 从门店数量看,截至2024年底,呷哺呷哺集团旗下共有967家餐厅,其中760间呷哺呷哺餐厅、197间凑凑餐厅。财报显示,年内新开78间餐厅,包括65间呷哺呷哺餐厅和13间凑凑餐厅,年内共关闭219间餐厅,包括138间呷哺呷哺餐厅和73间凑凑餐厅。谈及闭店原因,公司表示,由于部分餐厅所在位置无法突显呷哺呷哺“高性价比”形象,以及由于各种商业原因。 从餐厅经营的角度看,呷哺呷哺餐厅2024年同店销售额下滑23.3%,人均消费为54.8元,较上年同期降低7.4元。虽然降价策略导致客单价降低,但并未拉动餐厅翻台率的提升,财报显示,呷哺呷哺餐厅2024年翻台率为2.5次/天,上年同期为2.6次/天。 凑凑餐厅2024年同店销售额下滑32%,人均消费为123.5元,较上年同期降低18.8元,翻台率为1.6次/天,上年同期为2.0次/天。 呷哺呷哺在财报中表示,2024年消费结构出现变化,部分消费者更倾向于性价比较高的产品和服务。 去年5月,呷哺呷哺高调表示“套餐价格全线下调,套餐价回旧时光”。但蓝鲸新闻走访呷哺呷哺餐厅发现,套餐价格依旧较高。从官方小程序公布的招牌套餐的价格看,单人套餐价格55元-77元不等,虽说低至55元,但只有“雪花嫩鱼卷套餐”这一款的价格在55元,牛肉、羊肉相关套餐的价格均在60元以上。 以羔羊肉套餐为例,官方小程序为61元/份,包含锅底、调料、蔬菜拼盘、主食、茶饮。蓝鲸新闻注意到,套餐分量较足,部分出现剩菜情况。从就餐场景看,除了传统的“一人食”场景外,呷哺呷哺同样是家庭就餐、同事小型聚会的选择。 有业内人士告诉蓝鲸新闻,从呷哺呷哺套餐的搭配看,未来仍有降价空间,毕竟很多旋转小火锅的客单价在40元左右,但对于呷哺呷哺餐厅来说,降价的最大制约是店面租金较高。 窄门餐眼数据显示,呷哺呷哺近六成门店分布于一线、新一线城市,本身就承受较高租金、人力成本,而这其中大部分的门店位于商场内,租金压力会更大一些。财报显示,2024年呷哺呷哺集团整体租金成本为2.98亿元,占营收比重的6.3%。对比海底捞2024年餐厅租金情况,海底捞租金成本仅为营收比重的1%。 从行业竞争的角度看,“一人食”需求仍在,近年来,左庭右院、太二酸菜鱼均推出针对“一人食”场景的套餐。聚焦“小火锅”品类,天眼查显示,目前从事“小火锅”经营的注册企业超过2.5万家,其中30%左右的小火锅企业为近三年内新增。 谈及未来发展规划,呷哺呷哺表示,集团规划呷哺呷哺品牌在2025年开业餐厅不低于95间,翻台率至少为3倍,争取在顶级项目如大型娱乐主题乐园、机场、火车站等客流密集点位开出更多高利润餐厅。凑凑则采取更为谨慎的开店策略,会选择优质商场进驻开店。 此外,聚焦会员体系,呷哺呷哺表示,2024年全年,新增会员近503万,累计会员数近4200万人,会员消费频次提升至3.33次,同比提高1.4倍。未来将以“畅吃卡”为核心,优化会员运营。 推荐话题
