咖啡豆价格狂飙,云南豆商却在赔钱 文章摘要 对于云南咖啡生豆贸易商、森宇咖啡董事长陈俊先来说,这是从业以来“最累、最兵荒马乱”的一年。 每天早7点到晚11点,他在各家鲜果处理厂、自家工厂、仓库间不停穿梭,电话也响个不停。所有忙碌都围绕三件事:找货,卖货,谈价。仅在我们打电话的2小时内,就有至少三家采购商的电话打进来。询价电话总在固定时间段涌来,内容也几乎一模一样:今天什么价格,能有多少货?忙到脚底都发麻,成为这段时间的日常。 一切源于咖啡豆价格的暴涨。占据全球总产量三分之一的巴西咖啡产量下滑,推动咖啡期货的价格从去年起持续攀升到历史新高——最高达到440美分/磅,相较去年11月份的270.72美分/磅,涨幅超过62%。 云南咖啡豆的价格也一路狂飙,雀巢在当地的收购价格高达每公斤64.5元,比去年产季的价格翻了接近一倍。 情况从2月21日起“变得更糟”——咖啡豆期货价格开始下降,2月24日期货市场日收盘价已降至381美分/磅。 以下是陈俊先的讲述: 往年咖啡生豆市场价低,我们会提前收鲜果和带壳豆,有多少收多少,因为销售渠道多,价格低也好卖。生豆的市场报价日波动是每公斤几毛钱,我们和采购商们签了合同后,这一单的价格也就锁了。 但今年产季刚开始,生豆价格就达到每公斤38~39元,大家都比较慎重,不敢囤货,基本上是客户下单、签好锁价合同,我们再去收原材料鲜果或带壳豆来处理。交货周期大约是三到五天,我们会在原材料市场价跌的时候多买一些,涨的时候少买一点,最后保证利润稳定。 但没想到,这次价格涨这么快。睡一觉起来,原材料带壳豆的市场价每公斤几乎涨了1块,再睡一觉天更塌了。等到5天后交货时,成本远远高于我们5天前的销售价,每公斤亏了4块多。 我们的利润其实远远包不住每天一两块的价格浮动。批量小的精品咖啡豆每公斤会加上两三块,但对于大宗采购,各个环节的市场价都很透明,加工出来成本就在每公斤60块左右,利润只能加上几毛钱,核算下来利润率只有3‰~5‰,这也已经是尽力所得的利润。  陈俊先在农户家做咖啡豆质检。图源:受访者供图 同样100吨货,跌1块,我可能要卖300多吨才能把这个钱赚回来。但是卖300吨豆的精力,可比卖100吨多了不止3倍。 我没有那么大的资本,所有的产业积累都是自己一步一步做出来的,所以我的策略就是求稳,挣几毛钱的合理利润。 但现在价格涨到60块以上,我更加不敢囤货了,万一一夜之间跌3块,可能我今年所有的钱都会亏进去。 与此同时,国内市场喝咖啡的人每年都越来越多。2018年开始,瑞幸、蜜雪冰城、Manner等大大小小的连锁品牌们陆续进入云南,增加对云南豆的采购量。这是因为除了价格相对便宜,性价比高,云南生豆质量每年也在提升,从最开始加工工艺比较粗放,到后来有了发酵等精细化管理,生豆风味逐渐变好,品牌采购量也就多了起来。 但价格涨起来也才两三年,虽然咖农已经在扩种咖啡树,但咖啡需要3~4年才挂果,7~8年才到挂果的旺季,所以很多豆子在国内市场就直接消化掉了,外贸减少了几乎90%。 云南咖啡市场的参考价,是雀巢和星巴克在当地的生豆采购价,大家也叫咖啡米。对于当地来说,雀巢、星巴克的采购价是保底,它们的定价基础则是期货交易所“美国C型咖啡”的期货价格,往年雀巢会在期货价格基础上每磅减5~10美分。相比大豆、玉米这样的大宗期货,咖啡豆的生产规模更小,市场波动也会更明显。  咖啡鲜果处理现场,鲜果需要经过处理、干燥才能变为带壳豆/干豆,再经过脱壳、筛选后变为生豆。图源:受访者供图 今年期货高到离谱,云南咖啡也到了历史最高价格。于是往年都看期货交割价即现货价的农户,现在也学会了看当天期货价,来倒推鲜果的售价。 这个产季,鲜果价格涨到每公斤11块,六七年前还只有1.2~1.3块。5公斤鲜果只能出1斤带壳豆,带壳豆处理成生豆,大概70%是好豆,有些批次瑕疵率甚至达到38%,最后成本就非常高——如果说玩翡翠是赌石,做咖啡就是赌豆。 另外,今年还是咖啡豆产量的小年。咖啡类似于水果,产量有一年大年、一年小年。第一年树木耗费了很多营养物质来生长果实,加上采摘的时候,树枝和叶柄连接位置即叶腋芽可能会受伤,就会导致第二年树木也需要休养。 再加上去年开花期时云南遭遇干旱,咖啡树开的花比较小和紧缩,第二波开花时又遇到暴雨洪涝,花期受损更加严重,整个产季可能会减产30%,原本云南产地一年生豆产量大概有15 万吨,今年可能只有10万吨。这些都导致价格的上涨。 我也想过要不要买期货来对冲一下,但是期货对于我们来说比较难,需要国外经营主体,还要把钱换成美金放在那流转。几百万美金的流动资金,我们也很需要。 现在的状况就是大亏小赚。财报很好看,流水、营业额、税收都有了,但是最后账上没钱。 甚至我们连账都来不及算明白。往年我们差不多一个星期就交易一个单,但今年一天就有两个单,资金和货品流转都非常快。客户甚至都连样品都不提前验了,只看照片和质检报告,我的样品快递都还没来取,货已经卖出去了。 三、从财务到质检,全员寻货 往年买鲜果,我们和咖农说,要是鲜果的红果率不达标,过多的绿果、黄果要扣钱,他们会答应让工人采摘仔细一点。但今年我们再去和咖农说果子有点绿,他会说我们不要,有别人会要,我们就只能拿下,不然就没有货。但绿果多,意味着最后加工的瑕疵率更高,成本也会更高。 所以我们也更倾向于买带壳豆——买带壳豆,两三天就能送到我的厂里,可以直接加工成生豆,但买鲜果,还得对鲜果进行脱果、干燥处理,我压的钱会更久。 即使这样,算上干豆加工、给客户抽样验货、开发票的时间,我们的资金运转周期也要两周,资金压力让我们很崩溃。我每天基本要支出几百万,这么多钱单单存在银行的利润,可能都比我挣得多。 今年的咖啡鲜果与往年的鲜果对比。图源:受访者供图 但今年这种情况不复存在,他们不需要出来卖,就有成堆的人上门去买。我们得主动去打电话求货,问对方烘干了多少豆子,可以卖多少,甚至需要“讨价还价”,希望能卖给我们多一些。 并且,现在基本上需要全额付款,因为付不付预付款没用。一觉起来,带壳豆的价格每公斤涨了两三块,加工厂会给两个选项,要么加钱按市场价拿走,要么卖给别人。我们想退回定金,对方说钱都压在鲜果里了,要等两个星期,我们的资金也就这样一块被压住。 这段时间,我们公司所有人,质检、财务,甚至连烘焙厂的同事都被抓来支援,六七点起床,去工业园内以及一些零散分布在普洱县的鲜果处理站、加工厂找货,忙到夜里十一二点回家。 之所以起这么早,是因为鲜果处理厂会连夜将咖啡鲜果烘干,第二天一早我们就直接去处理厂看烘得怎么样。同事们家里都有种植咖啡的,知道如何抽样、杯测。抽检合格后,我们也不敢走开,直接打电话约车装货,尽可能避免突发情况。 价格高到疯狂时,人性的弱点也都会暴露出来。 但这样不仅让企业失信于人,也会打乱所有人的采购计划。我们自己就碰到了加工厂违约,对方没有按时按质交,导致我们只能重新高价采购,再加工、交给客户。 四、无论如何,9.9很难做得来
